Besan becomes a spongy, sour-sweet, and very soft dhokla and people prefer these delicious steamed, soft Gujarati khaman dhoklas to break, as a breakfast or as a snack.
These khaman dhoklas can be used to make variants such as Amiri khaman, Raswala dhokla ,Pav Bhaji dhokla, Besan Dhokla, Rava Dhokla, Khatta Dhokla, Paneer Dhokla, Rawa Dhokla, Jhatpat Dhokla & many more.
It takes very little oil to make Khaman Dhokla and it is so easy to make that anyone can make this.
Ingredients required to make Khaman Dhokla

1 cup gram flour
1 tsp sugar
1 tablespoon green chili and ginger paste
1 tablespoon oil 1/2 cup yogurt
1/2 cup hot water
1 tsp salt
A pinch of soda
Tempering pan
1 tsp mustard
3-4 green chilies, chopped
Juice of 1 lemon
Dhokla Stand or Cake Tin
Coriander leaves for garnishing
Know an easy method of making Khaman Dhokla Recipe Step by step

First of all, mix gram flour, semolina, salt, turmeric powder, 1/2 tsp sugar in a mixing bowl and mix well. Till the batter kernels are complete, prepare the batter by mixing it with a smooth and thick solution. In total,
we have used 1 cup of water in the batter.
Now add 1 teaspoon lemon juice and 1 tbsp oil. Mix everything well, cover it and cover the batter and let it rest for 30 minutes, till then the preparation of cooking dhokla can be done.
To cook Dhokla, take a vessel in which mold can be easily kept and it can be covered well. Put a stand in this water. On top of this stand,
we will place the Dhokla mold and put 2 cups of water in it and keep it on a medium flame for heating.
After 30 minutes, after letting the batter rest, add baking soda and baking powder to the batter, and cover with a lid so that the water does not come out bouncing and cook the dhokla on medium flame until the batter is flowered. Dhokla will take 18-20 minutes.
After 18 minutes, put a knife or toothpick to check, if the mixture does not stick in the knife, then Dhokla is cooked. If the batter is sticking to the toothpick, then you need to let it steam for some more time.
Your dhokla will be ready.

Khaman dhokla recipe While the dhokla is cooling, meanwhile, heat 1 tbsp oil in a small pan and add mustard seeds and cover it.
When the mustard seeds crackle, add 1 cup of water, 1 tbsp lemon juice, 1 tbsp sugar, chopped green chilies, and salt.
When the Khaman dhokla cools down a little, separate the Khaman dhokla from the edge slowly with the help of a knife, now place any other plate on the Khaman dhokla plate.
You can garnish with some coriander to make Khaman Dhokla even more spectacular.
Serve immediately this spongy instant Khaman dhokla with green coriander chutney, coconut chutney, or sweet chutney.
Some tips for making Khaman Dhokla Recipe
* Instead of leaving it for 2 hours to lift the yeast in the mixture, you can also put a little eno in it, this will cause the yeast to rise immediately in the batter.
* Instead of putting all the water together in the batter, you can add water slowly in a little while shaking the batter. By pouring water together, the batter thickens.
* After 45 minutes while cooking the Khaman dhokla, put the knife in the pot and start checking it.
* If you want your Khaman dhoklas soft, use more water.
* To make the Khaman dhokla spicier, raw green chili can be cut with coriander and poured over it.
* If you want to make Khaman Dhokla and eat it after a while, then use water more because Khaman Dhokla absorbs water.
