Usually, the khichdi is a dish which is made at home only when someone is ill or not really well as it considers a light food for digestion without any extra spice so that, it helps to cure the one who is not well.

We shall go for the first recipe which is Khichdi Thepla, as we all know Thepla is the most favourite snack of Gujarati’s. So if you are Gujarati, then this recipe is for you so that you can enjoy your favourite snack in an innovative way. Khichdi Thepla is easy to make and one can also enjoy it with any sabzi or chutney or sauce of your choice.
It takes about 15-20 minutes to make this recipe so that one can make this with no time healthy snack. Also, the children will enjoy the new version of khichdi in the form of thepla.

The Ingredients to make Khichdi Thepla :
- 1 cup cooked khichdi (of any flavour)
- 1 cup of wheat flour
- 1/4 cup of gram flour (Besan)
- 1/4 cup of Bajri flour
- 1/2 tbsp of green chillies
- 1/2 tbsp of garlic
- 1/2 tbsp of ginger
- 1/4 tbsp of carom seeds (Ajwain)
- 1/4 tbsp of turmeric powder
- 1/4 tbsp of red chilli powder
- 1/4 tbsp of coriander powder
- Salt to taste
- 3 tbsp of oil
- 1/4 cup of coriander
Method:
For Khichdi Thepla, Take a cup of cooked khichdi of any combination and any flavour in a bowl. Add 1 cup of wheat flour, 1/4 cup of gram flour (Besan), 1/4 cup of Bajri Flour (Bajri ka atta) you can also add any flour of your choice.
Then add spices, 1/2 tbsp of chopped or grind green chilies, 1/2 tbsp of chopped or grated garlic, 1/2 tbsp of chopped or grated ginger, 1/4 tbsp of carom seeds (Ajwain).
Also add 1/4 tbsp of turmeric powder, 1/4 of red chili powder, 1/4 of coriander powder, 1/4 cup of freshly chopped coriander, 3 tbsp oil, and salt to taste.
Now, mix all the ingredients properly so that it becomes in the form of dough (add water if needed). Mix the dough for 2-3 minutes for soft Thepla.
After, the disc-shaped frying pan (Tava) allows it to become hot, on the gas on low-medium flame.
On other hand, Rub your hands with oil take a small portion of dough and roll it into a round shape.
Roll the small dough and make a round shape roti with help of wheat flour to avoid stickiness on the rolling board (Chakla).
Make sure the Thepla must be thick as compared to roti, now take the Thepla and place it on the Frying Pan (Tava) and fry it with 1 tbsp oil on both sides and cook till golden brown. Your Khichdi Thepla is ready, you can enjoy this with any sauce or chutney or chai.
